Monday Recipe Mission: Yellow Cake From Scratch **UPDATED & Improved**

Sorry I am a bit late.  I have been dealing with a house full of sick kids. And all this swine flu vs. another virus has my mind going crazy!!! Anyhow, here is this week’s recipe!!! I just made it for my son’s 3rd birthday. 

Yellow Cake From Scratch
I have been on a serious mission to find a yellow/white cake recipe from scratch.  There are a lot out there, so I have learned, but are they good? NO!!!  After searching long and hard I have found one that I think is pretty darn good.  It’s light, fluffy, moist, and most importantly it tastes Great!  I have a few more to try but this one is by far the best thus far!!

Just a few changed that make this cake even better and moist!

1 1/2 cup butter (softened)
1 1/2 cups white sugar
4 eggs
1 1/2 teaspoon vanilla extract
3 cups all-purpose  CAKE flour (Makes the cake much better, I use softsilk cake flour)
1 tablespoon baking powder
1/4 tsp baking soda
1 teaspoon salt
1 cup whole milk
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch pan. Mix together the flour, baking powder, baking soda and salt; set aside.
In a large bowl, beat sugar, butter and vanilla until light and fluffy. Add eggs one at a time, FOLDING each addition one in. Add flour mixture alternately with milk, beating just to combine.  Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 18-25 minutes, or until a toothpick inserted into the cake comes out clean. Frost and enjoy.
