Homemade Watermelon Margaritas

Are you looking for a nice way to cool off this summer as the evening comes to an end.  I have a fantastic drink for all the Fabulous Mama’s out there.

Homemade Watermelon Margaritas


Ingredients:
7 1/2 pounds seedless watermelon, rind removed, cut into 1-inch cubes
2 tablespoons sugar
6 ounces (3/4 cup) silver tequila
3 ounces (1/4 cup plus 2 tablespoons) triple sec

  • 3 tablespoons fresh lime juice

2-3 limes (cut into wedges for garnish)

2 tablespoons or coarse salt or sugar (your preference) for rim of glasses


      • Directions:
            • 1) Place 24 watermelon cubes on a baking sheet lined with parchment. Cover, and freeze at least 1 hour (up to 2 days)

        • 2) Puree remaining watermelon and the sugar in a blender until smooth. Strain the pureed watermelon to remove a lot of the pulpiness. (You should have 3 cups.)

      3) Place watermelon juice, lime juice, tequila, and triple sec in a glass pitcher and mix. 

        • 4) Place coarse salt or sugar into a saucer. Rub rims of glasses with 1 lime wedge and spin rim of each glass in salt or sugar to coat. 

        • 5) Place watermelon cubes in glasses. 

          6) Using a cocktail shaker, (per glass)  mix 3/4 cup margarita with 1 cup ice. Strain into a glass. Repeat. Garnish glasses with lime wedge. Serve.
