Texas Caviar – A Refreshing Summer Appetizer

1 can of black beans (drained & rinsed)
1 can pinto beans (any white bean) (drained & rinsed)
1 can black eyed pea beans (drained & rinsed)
1 cup fresh petite diced tomatoes ( or 1 can)
2 jalapeno peppers (seeded & diced fine) (use diced green chiles for a milder taste)
3 garlic cloves (minced)
1/2  cup sweet onion
1/2 cup of green pepper
1 can of corn

1/2 cup apple cider vinegar
1/2 cup sugar
1/4 oil
1/4 cup of lime juice

In saucepan, combine vinegar, sugar, and oil.  Heat until sugar is dissolved, stirring continuously. Add lime juice and set aside.
In a seperate bowl combine all remaining ingredients.  Pour sauce over and fold into salsa mixture.
Cover and refrigerate overnight or at least for a few hours.
Serve with tortilla chips or eat alone as a salad.

I  promise you this is fabulous.  It has just enough sweetness mix with a little tang.   I actually made it for a party over Father’s Day weekend and it was a huge hit.  It has a very addicting flavor.
