Homemade Cheesecake: The "Ultimate" of Cheesecake Recipes

This Homemade Cheesecake Recipe has a FANTASTIC taste with a slightly tangy topping.  The best part is it is so easy to make.  I got this recipe from my mother-in-law.  She has always received amazing reviews whenever she makes it for a party.  We just made it for a 40th Birthday Luau and it was an absolute HIT! 

Homemade Cheesecake filling
3 8 oz packages cream cheese
3 eggs
1 cup of sugar
1/4 tsp almond extract
1 tsp vanilla
1 package of graham crackers crumbled
1/4 cup sugar
1/2 cup (1 stick) butter
1 pint sour cream 
1/2 cup of sugar
1/2 tsp vanilla
1/4 tsp almond extract
Preheat oven to 350 degrees.
Mix all crust ingredients together and press into bottom of pan.  (I use a jelly roll pan – cheesecake comes out thinner) Chill.  
Beat together all cake ingredients.  Pour cheesecake mixture on top of crust and bake 50 minutes, or until center is dry.  
While cake is baking blend topping ingredients together.  After cake has baked let cool for aprox. 5-10 minutes.  Increase oven temperature to 400 degrees.  Spread topping onto cake.  Bake additional  10 minutes.  
**For a 9 inch Pie Pan cut this recipe in half.  Bake for 20-25minutes.  Spread topping on cheesecake and bake 5 minutes.
