Delightful Homemade Buttercream Frosting

In celebration of my little ones 2nd birthday I thought I would give you all a wonderful homemade buttercream frosting recipe.  I’m doing my best to go the “All Natural” route and many of the store bought frosting have a lot of extra unnecessary ingredients.  I can promise you two things.  The ingredients have nothing artificial and this frosting is truly delightful.  The only thing I can’t promise is that it’s supper good for you.  🙂

I will say it is sweet but isn’t buttercream suppose to be sweet?!  The buttery flavor balances it out though.  Everyone raves about it whenever I put it on cupcakes/cake or cookies.

Ingredients

  • 3 cups confectioners’ sugar
  • 1 cup butter
  • 1 teaspoon vanilla extract (organic)
  • 1 to 2 tablespoons whipping cream

Directions

Mix together sugar and butter using or stanard mixer or handheld with do.  Mix on low speed until well blended.  Increase speed to medium  and beat for another 3 minutes.
Add vanilla and cream and continue to beat on medium speed for 1 minute more.  Feel free to add more cream if needed to your desired spreading consistency.
ENJOY!

I have a corn allergy and icing sugar contains cornstarch…… so this is my version of a Butter Cream Icing! *Also good for when you thought that you had icing sugar in the house but you didn't and you already made the cake! LOLButter Cream Icing1 ¼ cup sugar3oz water3 egg whites1¼ cup butterCombine sugar and water in a sauce pan heat between 234-240F or until syrup forms a soft ball that flattens when removed from ice water onto surface.Beat egg whites with a mixer until they form stiff peaks pour syrup over egg whites while beating on high. For about 5 minutes ( it will look thin and then become fluffy) slowly add in butter a little at a time beat until smooth.**Make sure that you beat the eggs while making the syrup as the syrup will crystallize if you leave it to cool too long. Also please do not use Margarine in the icing it will not turn out the same.**
