I try to live a healthy lifestyle and also bring my children up the same way. Many parents would like to cook meals that are healthier for their families but either don’t know where to begin or are skeptical of whether the food with actually taste good. I’m here to tell you it’s possible.
Every weekend I’m going to prepare a new meal that is a healthier version than your typical recipe. I do plan to try some of those tasty kid-friendly recipes that disguise fruits and veggies at some point. Every Monday I will share my recipe with you.
Modern Style Mama is here to prove that you CAN eat many of your favorite recipes and still be Eating Healthier. All it’s takes is a little tweeking and VIOLE…it’s a Healthy Recipe Makeover.
Healthy Lobster Bisque
3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1 1/4 cups skim milk
- 2 tablespoons tomato paste (or 4 tbsp tomato sauce)
- 1 cup chicken stock
- 1/4 white wine
- 1 tsp worcestershire sauce
- 3 tablespoons minced saute onion
- 16oz cooked lobster meat, (cubed or shredded)
- 1/2 cup half and half
- 1/4 cup light cream
Melt the butter in a large pot over medium heat. Stir in the flour, salt, pepper and cayenne pepper until well blended. Gradually stir in the milk so that no lumps form. Next stir in the tomato paste, chicken stock, white wine, and worcestershire sauce. Cook over low heat, stirring constantly, until the soup begins to thicken. Add the onion and lobster. Cook and stir for 10 more minutes. Stir in the half and half & light cream, heat through and serve.
Serve in soup bowls. Eat bisque with french bread cut into pieces or with Triscuits.
