1 cup sugar
1 tsp vanilla (organic)
2 eggs
2 1/2 cup flour
1 tsp baking powder
1/2 tsp salt
(all ingredients should be at room temperature)
Directions:
Heat oven to 375 degrees F.
Cream together butter and sugar, add eggs and vanilla and mix until light and fluffy.
Sift flour, baking powder, and salt into a medium mixing bowl.
Add dry ingredients a little at a time and mix until combined. Use hands if necessary so dough holds together.
Cover and refrigerate 1 hour or until firm.
Roll out dough 1/8 inch thick on floured surface. Cut cookies into desired shapes and place 2 inches apart on ungreased cookie sheet.
Bake for 6-8 minutes or until very light golden brown. Remove from cookie sheet to wire rack. Frost and decorate once cooled.
Makes about 4 dozen 2 – 2 1/2 inch cookies
*I tend to make a lot less. But I also make them thicker than 1/8 inch and bigger than 2 inches.
